White German Chocolate Cake

 



Ingredients:

For the Cake:


2 ½ cups all-purpose flour

2 ½ tsp baking powder

½ tsp salt

1 cup unsalted butter, softened

1 ¾ cups granulated sugar

4 large eggs

1 tsp vanilla extract

1 cup buttermilk

For the Coconut-Pecan Filling and Frosting:


1 cup evaporated milk (about 1 can)

1 ¼ cups granulated sugar

½ cup unsalted butter

3 large egg yolks, beaten

1 tsp vanilla extract

1 ½ cups sweetened shredded coconut

1 ½ cups chopped pecans

Instructions:

1. Prepare the Cake:

Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.

Divide the batter evenly between the three prepared cake pans and smooth the tops.

Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

2. Make the Coconut-Pecan Filling and Frosting:

In a medium saucepan, combine the evaporated milk, sugar, butter, and egg yolks over medium heat. Stir constantly to avoid the eggs from scrambling.

Cook the mixture, stirring frequently, for about 10-15 minutes, or until it thickens. The mixture should coat the back of a spoon.

Remove from heat and stir in the vanilla extract, shredded coconut, and chopped pecans. Set aside to cool to room temperature.

3. Assemble the Cake:

Place one layer of cake on a serving plate. Spread a generous amount of the coconut-pecan frosting on top.

Place the second cake layer on top and repeat with more frosting. Add the third layer of cake and cover the entire cake with the remaining frosting.

Garnish with additional chopped pecans or coconut flakes, if desired.
